Job Summary

Supervises the personnel and the duties of the assigned personnel of a prescribed food service unit or units and assumes the responsibilities of the manager of the unit or units in the absence of the manager. Performs related work as required.

 

Essential Functions

  • Supervises the production of product and services to established standards for the benefit of the customers of a cash operation food service unit or units.
  • Determines, under the supervision of the Chef de Cuisine, inventory and pricing for food cost control and orders same using established forms and procedures on a computerized ordering system
  • Ensures the overall cleanliness of food service unit or units for a pleasant customer atmosphere and for sanitation requirements.
  • Supervises unit cash handling, billing of customers, and other related duties to insure accurate records and maximize cash flow.
  • Leads the unit in planning and serving special events or other related duties to provide satisfactory service and controlled costs.
  • Keeps all records pertaining to any food service unit or units assigned using standard report forms and procedures to maintain accurate operating records.
  • Performs daily duties related to staffing, training, and processing payroll and evaluation of classified personnel including the scheduling, hiring, training, processing payroll and evaluation of student and non-student part-time employees following standard procedures.
  • Takes weekly inventories.
  • Resolves customer complaints to maintain good customer relations.

  • Performs other duties as assigned.

 

Minimum Qualifications (Knowledge, Skills, Abilities, Education, Experience, Certifications, Licensure)

  • At least three (3) year's of full time supervisory experience. A diploma from a culinary arts program may be substituted for the required experience.
  • Knowledge of large-scale food service operations.
  • Knowledge of cash handling and related equipment used in cash handling, cash registers, calculators, etc.
  • Knowledge of personnel control and personnel record keeping.
  • Physically able to perform and carry out all tasks normal to a large food service unit.
  • Knowledge of and familiarity with recipes.
  • Knowledge of kitchen equipment and related utensils and the maintenance and upkeep of same.
  • Ability to understand and control food and labor cost.
  • Working knowledge of Microsoft Office
  • Knowledge of computerized ordering systems
  • Incumbents must be certified as food handlers and also possess T.I.P.S. certification within six (6) months of the appointment start date through a recognized program approved by the University of Massachusetts (i.e. ServSafe, MRA, etc).

 

Physical Demands/Working Conditions

  • Requires the ability to balance, carry, push, pull, stand, bend, reach, twist, lift and perform repetitive movements.

  • This position is designated as essential personnel.

 

Work Schedule

  • Varies depending on department needs; may include weekends and holidays.

 

Salary Information

Grade 15
